Ingredients
  

  • 12 ounces whole wheat pasta (spaghetti or linguine recommended)
  • 1 cup tahini
  • 1/2 cup fresh lemon juice (from about 3-4 lemons)
  • 1/4 cup water plus more as needed for thinning the sauce
  • 3 cloves garlic minced
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon black pepper or to taste

Method
 

  1. Bring a large pot of generously salted water to a rolling boil. Add your whole wheat pasta and cook according to package directions until al dente. Reserve about 1 cup of the pasta cooking water before draining the pasta.

  2. While the pasta is cooking, in a medium-sized bowl, combine the tahini, fresh lemon juice, minced garlic, sea salt, and black pepper.

  3. Begin whisking the ingredients together. The mixture will likely seize up and become very thick initially. This is normal!
  4. Gradually add the reserved pasta cooking water, one tablespoon at a time, while continuously whisking. Continue adding water until the sauce reaches your desired creamy, pourable consistency. You may not need all of the reserved water, or you might need a little more. The sauce should be smooth and emulsified, free of lumps. Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as per your preference.

  5. Add the drained, cooked pasta directly to the bowl with the tahini sauce.

  6. Gently toss the pasta with the sauce until it is evenly coated. If the sauce seems a little too thick, add another tablespoon of pasta water to loosen it up.
