- In a medium-sized mixing bowl, combine the rolled oats, vanilla protein powder, unsweetened shredded coconut, and a pinch of salt. Stir everything together until well incorporated. - If the mixture seems too dry and crumbly, gradually add the almond milk, one tablespoon at a time, mixing well after each addition. You're looking for a consistency that's moist enough to hold together when rolled into balls but not sticky.1-2 tablespoons unsweetened almond milk
- Gently fold in the rainbow sprinkles, reserving some for rolling later if desired. Be careful not to overmix at this stage, as it can break down the sprinkles.1/4 cup rainbow sprinkles
- Once everything is combined, take about a tablespoon of the mixture and roll it between your palms to form a compact ball. Repeat this process until all the mixture has been used.
- If you'd like an extra festive touch, spread some additional rainbow sprinkles onto a shallow plate. Roll each protein ball in the sprinkles to coat them evenly.1/4 cup rainbow sprinkles
- Place the Decadent Birthday Cake Protein Balls on a plate or baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up, making them easier to handle and enjoy.
