Ingredients
  

  • 150 g fresh or frozen raspberries
  • 100 g good quality dark chocolate at least 70% cocoa solids
  • 100 ml heavy cream
  • 50 g unsalted butter
  • 50 g granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch salt
Optional garnishes
  • additional fresh raspberries
  • chocolate shavings
  • a sprig of mint

Method
 

  1. If using frozen raspberries, gently thaw them. You can either mash half of the raspberries with a fork to create a slightly chunky compote, or leave them whole for bursts of fresh flavor. Set aside about a quarter of the whole raspberries for garnish.

  2. In a heatproof bowl set over a saucepan of simmering water (ensure the bottom of the bowl doesn't touch the water), melt the dark chocolate and unsalted butter together. Stir occasionally until smooth and fully combined. Be patient to avoid scorching the chocolate.

  3. In a separate, clean bowl, whip the heavy cream with the granulated sugar and vanilla extract until soft peaks form. Be careful not to over-whip, as you want a creamy, luscious texture, not a stiff one.

  4. Once the chocolate mixture is smooth and slightly cooled (but still fluid), gently fold it into the whipped cream. Do this in two additions, using a spatula and a folding motion to maintain the airy texture of the cream. Avoid overmixing, which can deflate the whipped cream.
  5. Gently fold in the prepared raspberries (mashed and/or whole) into the chocolate mixture. Again, use a gentle folding motion to distribute them evenly without crushing them too much, unless you prefer a smoother raspberry element.

  6. Spoon the Dessert Himbeer-Schoko-Harmonie mixture into individual serving glasses, small bowls, or ramekins. Cover them with plastic wrap, pressing it gently against the surface to prevent a skin from forming.
  7. Refrigerate for at least 2 hours, or until the dessert is set and firm. This chilling time is crucial for the flavors to meld and for the dessert to achieve its desired texture.
  8. Before serving, garnish each Dessert Himbeer-Schoko-Harmonie with the reserved fresh raspberries, a sprinkle of chocolate shavings, or a delicate sprig of mint for an elegant touch. Serve chilled.
