Total Time 2 minutes
Course: Candy, Dessert

Ingredients

  • 2 tablespoons unflavored gelatin powder
  • 1/2 cup cold water
  • 1/4 cup fruit juice any flavor you like, e.g., cherry, grape, orange
  • 1/4 cup granulated sugar
  • 1 tablespoon light corn syrup optional, for gloss and chewiness
  • 1-2 drops food coloring optional, to match your juice flavor

Equipment

  • Small Saucepan
  • Candy molds

Method

  1. In a small saucepan, sprinkle the unflavored gelatin powder evenly over the 1/2 cup of cold water. Let it sit undisturbed for about 5-10 minutes. You'll notice the gelatin absorb the water and begin to thicken, appearing like a gel. This blooming process is crucial for ensuring the gelatin dissolves smoothly later.
2 tablespoons unflavored gelatin powder, 1/2 cup cold water
  2. Place the saucepan over low heat. Gently stir the gelatin mixture until it is completely dissolved and there are no grainy bits. Do not let it boil, as excessive heat can damage the gelatin's setting properties.
  3. Once the gelatin is fully dissolved, stir in the 1/4 cup of granulated sugar and the 1/4 cup of fruit juice. Continue stirring over low heat until the sugar has completely dissolved into the liquid. If you're using light corn syrup, add it now and stir to combine.

  4. If you want to enhance the color of your gummy bears, add a drop or two of food coloring at this stage. Stir well to distribute the color evenly throughout the mixture. Remember that the color will become more concentrated as the gummies set.
    1-2 drops food coloring
  5. Carefully and quickly pour the warm liquid mixture into your prepared candy molds. It’s best to work swiftly at this stage, as the mixture will start to thicken as it cools. You can use a small ladle, a dropper, or even a sturdy spoon to fill the molds accurately.
  6. Once your molds are full, place them in the refrigerator to chill. This is where the magic happens! Allow the gummy bears to set completely. This typically takes about 2-3 hours, but can sometimes be longer depending on the size of your molds and the temperature of your refrigerator.
  7. Once the gummy bears are firm to the touch and have a solid consistency, gently pop them out of their molds. If they are a little sticky, you can dust them lightly with cornstarch, but this is usually not necessary. Your delicious DIY candy versions are now ready to be enjoyed!

Notes

Leftover DIY candy versions can be stored in an airtight container at room temperature for up to a week. If your environment is particularly warm or humid, storing them in the refrigerator can extend their freshness for up to two weeks. For longer storage, freeze for up to 3 months.
