Ingredients
  

  • 1 cup cooked chicken breast finely shredded
  • 1/2 cup cooked sweet potato mashed
  • 1/4 cup plain, unsweetened Greek yogurt
  • 1 tablespoon fresh parsley finely chopped
  • 1 tablespoon chia seeds

Method
 

  1. In a medium mixing bowl, thoroughly combine the finely shredded cooked chicken breast, mashed cooked sweet potato, plain Greek yogurt, and finely chopped fresh parsley.

  2. Stir all the ingredients together until they are evenly distributed and form a somewhat cohesive mixture.
  3. Gently fold in the chia seeds, ensuring they are spread throughout the mixture.

  4. Using clean hands or a small spoon, roll or scoop small portions of the mixture to form bite-sized treats. Aim for about 1-inch diameter balls or flattened patties.
  5. Place the formed treats on a plate or baking sheet lined with parchment paper and refrigerate for at least 30 minutes to allow them to firm up.

Notes

Store in an airtight container in the refrigerator for up to 3-4 days. Freeze for up to 2-3 months. Thaw overnight in the refrigerator before serving.
