- Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the ground beef or turkey to the skillet. - Stir in the taco seasoning and water. Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened.1 packet Taco Seasoning, 2/3 cup Water
- While the meat is cooking, prepare your salad components. In a large serving bowl, combine the chopped romaine lettuce, halved cherry tomatoes, rinsed and drained black beans, and drained corn.1 head Romaine Lettuce, 1 cup Cherry Tomatoes, 1 can Black Beans, 1 can Corn
- Sprinkle the shredded cheddar cheese and Monterey Jack cheese over the salad ingredients. Just before serving, coarsely crush the Nacho Cheese Doritos and add them directly into the salad bowl.1 cup Shredded Cheddar Cheese, 1/2 cup Shredded Monterey Jack Cheese, 1 bag Nacho Cheese Doritos
- In a small bowl, whisk together the sour cream, mayonnaise, salsa, lime juice, chili powder, salt, and pepper until well combined and smooth.1/2 cup Sour Cream, 1/4 cup Mayonnaise, 2 tablespoons Salsa, 1 tablespoon Lime Juice, 1/2 teaspoon Chili Powder, to taste Salt, to taste Black Pepper
- Add the cooked taco meat mixture to the salad bowl. Drizzle the dressing over the top of the salad. Toss gently to combine all the ingredients. Serve immediately to ensure the Doritos stay as crunchy as possible.1 pound Ground Beef or Turkey
Notes
To store leftover Dorito Taco Salad, it's best to keep the components separate to maintain maximum freshness and crunch. Store the taco meat mixture and the salad ingredients (lettuce, beans, corn, tomatoes, cheese) in separate airtight containers in the refrigerator. The dressing should also be stored separately in an airtight container in the refrigerator. The salad will stay fresh for up to 2-3 days when stored this way. When you're ready to reheat and enjoy, combine the desired amount of salad ingredients and taco meat, and reheat the meat gently on the stovetop or in the microwave until warmed through. Add the crushed Doritos and dressing just before serving for the best texture. Freezing is not recommended for this salad as the lettuce and Doritos will become soggy upon thawing.
