Ingredients

Salad Base
  • 4 cups fresh broccoli florets Cut into bite-sized pieces
  • 1/2 cup red onion finely chopped
  • 1/2 cup raisins
  • 1/2 cup sunflower seeds toasted, optional
  • 4 strips cooked bacon crumbled (optional)
Creamy Dressing
  • 3/4 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon Dijon mustard
  • Pinch salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method

Instructions
  1. Prepare the dressing: In a medium bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and pepper until smooth and well combined. Set aside.
  2. Prepare the vegetables: Ensure the broccoli florets are washed and dried thoroughly. In a large mixing bowl, combine the broccoli florets, chopped red onion, raisins, and sunflower seeds (if using).
  3. Combine the salad: Pour the prepared dressing over the broccoli mixture. Toss gently until all ingredients are evenly coated.
  4. Add bacon and chill: Gently fold in the crumbled bacon, if using. Cover the bowl tightly with plastic wrap.
  5. Refrigerate for at least 30 minutes (or up to 4 hours) to allow the flavors to meld and slightly soften the broccoli.
  6. Taste and serve: Before serving, give the salad one final toss. Adjust seasoning (adding more salt or sugar if necessary). Serve cold.

Notes

For best results, chop the broccoli into small, uniform pieces. If preparing far in advance, you can lightly blanch the broccoli for 1 minute to improve texture after chilling, but this is optional.
