  • 16 oz Rotini or Fusilli pasta cooked al dente
  • 1 pint Cherry tomatoes halved
  • 8 oz Fresh mozzarella pearls drained
  • 1/2 cup Fresh basil leaves chiffonade or torn
Dressing
  • 1/3 cup Extra virgin olive oil
  • 1/4 cup Balsamic vinegar high quality
  • 1 clove Garlic minced
  • 1/2 tsp Dried oregano
  • 1/2 tsp Sea salt plus more to taste
  • 1/4 tsp Black pepper freshly ground
  • 2 tbsp Balsamic glaze for drizzling

Method
 

Instructions
  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a small glass jar or bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and black pepper until well emulsified.
  3. In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, and mozzarella pearls.
  4. Pour the prepared balsamic dressing over the pasta mixture and toss gently until all ingredients are evenly coated.
  5. Fold in the fresh basil leaves carefully to prevent them from bruising or wilting too much.
  6. Transfer to a serving bowl. Just before serving, drizzle with the balsamic glaze for extra flavor and visual plate appeal.

Notes

For the best flavor, let the salad sit at room temperature for 15 minutes before serving to allow the flavors to meld. If making ahead, add the fresh basil just before serving to keep it vibrant green.
