  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 2 tablespoons heavy cream optional, for a creamier sauce
  • 1 teaspoon dried Italian seasoning
  • salt and freshly ground black pepper to taste

  • fresh parsley, chopped for garnish (optional)

Method
 

  1. Pat the chicken breast cubes dry with paper towels. This helps them to sear better. Season generously with salt, black pepper, and Italian seasoning.

  2. Heat 1 tablespoon of olive oil in a large skillet or frying pan over medium-high heat. Add the seasoned chicken cubes in a single layer, ensuring not to overcrowd the pan (cook in batches if necessary). Sear the chicken for about 3-4 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

  3. Add the remaining 1 tablespoon of olive oil and the butter to the same skillet. Once the butter is melted and shimmering, add the trimmed green beans. Sauté for 5-7 minutes, stirring occasionally, until the green beans are tender-crisp and vibrant green.

  4. Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.

  5. If you desire a creamy sauce, stir in the heavy cream at this stage. Allow the sauce to simmer gently for 1-2 minutes, until it slightly thickens.

  6. Return the cooked chicken to the skillet with the green beans and sauce. Toss gently to combine and ensure the chicken is heated through. Taste and adjust seasoning with salt and pepper if needed.
