Ingredients
  

  • 2 cups cooked chicken shredded (rotisserie chicken works perfectly for convenience)
  • 8 ounces cream cheese softened
  • 1/2 cup buffalo sauce (adjust to your spice preference)
  • 1/2 cup ranch dressing (or blue cheese dressing for a tangier flavor)
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh chives (for garnish, optional)
  • Pinch red pepper flakes (for extra heat, optional)

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish or a small cast-iron skillet.
  2. In a large mixing bowl, combine the softened cream cheese, buffalo sauce, and ranch dressing. Mix well until everything is thoroughly combined and smooth. A rubber spatula or electric mixer on low speed works great here to ensure there are no lumps of cream cheese.

  3. Stir in the shredded cooked chicken, 1/2 cup of the shredded cheddar cheese, and all of the mozzarella cheese into the cream cheese mixture. Ensure the chicken is evenly coated and the cheeses are well distributed throughout the dip.

  4. Spoon the buffalo chicken dip mixture into your prepared baking dish, spreading it evenly.
  5. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the dip. This will create a beautiful golden-brown, bubbly crust.

  6. Bake for 20-25 minutes, or until the dip is hot, bubbly around the edges, and the cheese on top is melted and slightly golden brown. If you want a little extra crispiness, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
  7. Remove from the oven and let it rest for a few minutes. Garnish with fresh chopped chives and a pinch of red pepper flakes, if desired, before serving warm.

Notes

You can assemble the entire dip (without the top cheese layer, if desired) and store it covered in the refrigerator for up to 24 hours. When ready to bake, add the top cheese and bake as directed, adding a few extra minutes to account for the chilled temperature.
