  • 1/2 cup sour cream
  • 1/4 cup melted butter

  • 1/2 cup shredded sharp cheddar cheese, plus more for topping
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Method
 

  1. Begin by preheating your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with butter or cooking spray.
  2. In a large mixing bowl, combine the thawed shredded hash browns, cottage cheese, sour cream, and melted butter. Stir everything together until the hash browns are evenly coated.

  3. To the hash brown mixture, add the finely chopped yellow onion, 1/2 cup of shredded sharp cheddar cheese, garlic powder, and onion powder. Toss gently to distribute these flavor enhancers evenly throughout.

  4. Season the mixture generously with salt and black pepper to your taste.

  5. Spoon the entire mixture into the prepared baking dish, spreading it out evenly. Pat down the top gently to create a relatively smooth surface.
  6. Sprinkle an additional 1/4 to 1/2 cup of shredded sharp cheddar cheese over the top of the casserole.

  7. Place the baking dish in the preheated oven and bake for 35-45 minutes, or until the casserole is heated through, golden brown on top, and bubbling around the edges.
  8. Once beautifully baked, carefully remove the casserole from the oven. Let it rest for at least 5-10 minutes before serving.

Notes

Reheat leftovers in the oven at 350°F (175°C) for 15-20 minutes, or microwave on medium power for 1-2 minutes. Freezes well for up to 2-3 months.
