  • 1.5 lbs boneless, skinless chicken breasts or thighs sliced into thin strips
  • 1 large onion thinly sliced
  • 2 bell peppers any color combination, thinly sliced
  • 1 (1 oz) packet fajita seasoning or your own blend of chili powder, cumin, paprika, garlic powder, onion powder, and a pinch of cayenne
  • 1/4 cup water or chicken broth
  • 1 tablespoon olive oil
  • salt to taste
  • freshly ground black pepper to taste
  • jalapeños sliced, optional for extra heat

Method
 

  1. Thinly slice your chicken breasts or thighs into uniform strips. Slice your onion and bell peppers into thin strips as well. This ensures they cook evenly and absorb the flavors beautifully.

  2. Place the sliced chicken, onion, and bell peppers directly into your slow cooker.

  3. Sprinkle the entire packet of fajita seasoning over the chicken and vegetables. If you are making your own seasoning blend, add approximately 3-4 tablespoons total, adjusting to your taste. Pour in the 1/4 cup of water or chicken broth.

  4. Drizzle the olive oil over everything and season with salt and freshly ground black pepper to taste. If you like a spicier fajita, now is the time to add your sliced jalapeños.

  5. Cover the crockpot and cook on the LOW setting for 4-6 hours, or on HIGH for 2-3 hours. The chicken should be cooked through and tender, and the vegetables should be softened.
  6. Before serving, you can stir the contents of the crockpot to combine everything. For a more shredded chicken texture, you can use two forks to shred the chicken directly in the slow cooker. This creates a wonderfully succulent filling for your fajitas.

Notes

To store leftover fajitas, allow the mixture to cool slightly before transferring it to an airtight container. Refrigerate the leftovers within two hours of cooking and they will remain fresh for up to 3-4 days. Reheat on the stovetop (best for texture) or in the microwave. Can be frozen for 2-3 months.
