- Cover the crockpot and cook on the LOW setting for 4-6 hours, or on HIGH for 2-3 hours. The chicken should be cooked through and tender, and the vegetables should be softened.
- Before serving, you can stir the contents of the crockpot to combine everything. For a more shredded chicken texture, you can use two forks to shred the chicken directly in the slow cooker. Notes
To store leftover fajitas, allow the mixture to cool slightly before transferring it to an airtight container. Refrigerate the leftovers within two hours of cooking and they will remain fresh for up to 3-4 days. Reheat on the stovetop (best for texture) or in the microwave. Can be frozen for 2-3 months.
