Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 1 packet (1 oz) dry Italian salad dressing mix
  • 1/2 cup chicken broth
  • 4 oz cream cheese, softened and cut into cubes
  • 1/4 cup grated Parmesan cheese
  • Cooked angel hair pasta for serving (Optional)
  • Fresh parsley for garnish (Optional)

Method
 

  1. Lightly grease your slow cooker insert with cooking spray or butter to prevent sticking.
  2. Place the boneless, skinless chicken breasts or thighs in a single layer at the bottom of the slow cooker. If using chicken breasts, you can trim any excess fat before adding them.

  3. In a medium bowl, whisk together the condensed cream of chicken soup and the chicken broth until thoroughly combined and smooth.

  4. Stir the dry Italian salad dressing mix into the soup and broth mixture. Ensure it's well incorporated without any clumps.

  5. Pour the combined soup, broth, and dressing mixture evenly over the chicken in the slow cooker. Make sure the chicken is mostly submerged in the liquid for even cooking.

  6. Scatter the cubed, softened cream cheese over the top of the chicken and liquid. As it cooks, the cream cheese will melt and create a luxuriously smooth and rich sauce.

  7. Secure the lid on the slow cooker and cook on LOW for 4-6 hours, or on HIGH for 2-3 hours. The chicken is done when it is cooked through and easily shreds with a fork.
  8. Once the chicken is cooked, carefully remove it from the slow cooker. You can either shred the chicken using two forks directly in the crock pot, allowing it to absorb more sauce, or serve the chicken breasts whole.
  9. Stir the grated Parmesan cheese into the sauce in the slow cooker until it’s melted and well combined.
