Method
- Lightly grease your slow cooker insert with cooking spray or butter to prevent sticking.
- Place the boneless, skinless chicken breasts or thighs in a single layer at the bottom of the slow cooker. If using chicken breasts, you can trim any excess fat before adding them.1.5 lbs boneless, skinless chicken breasts or thighs
- In a medium bowl, whisk together the condensed cream of chicken soup and the chicken broth until thoroughly combined and smooth.1 can (10.75 oz) condensed cream of chicken soup, 1/2 cup chicken broth
- Stir the dry Italian salad dressing mix into the soup and broth mixture. Ensure it's well incorporated without any clumps.1 packet (1 oz) dry Italian salad dressing mix
- Pour the combined soup, broth, and dressing mixture evenly over the chicken in the slow cooker. Make sure the chicken is mostly submerged in the liquid for even cooking.1.5 lbs boneless, skinless chicken breasts or thighs
- Scatter the cubed, softened cream cheese over the top of the chicken and liquid. As it cooks, the cream cheese will melt and create a luxuriously smooth and rich sauce.4 oz cream cheese, softened and cut into cubes
- Secure the lid on the slow cooker and cook on LOW for 4-6 hours, or on HIGH for 2-3 hours. The chicken is done when it is cooked through and easily shreds with a fork.
- Once the chicken is cooked, carefully remove it from the slow cooker. You can either shred the chicken using two forks directly in the crock pot, allowing it to absorb more sauce, or serve the chicken breasts whole.
- Stir the grated Parmesan cheese into the sauce in the slow cooker until it’s melted and well combined.1/4 cup grated Parmesan cheese

This recipe can be stored in the refrigerator for up to 3-4 days or frozen for up to 2-3 months. Reheat gently on the stovetop or in the microwave.
