Ingredients
  

  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 8 ounces pasta such as fettuccine, penne, or spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese plus more for serving
  • 1/4 cup chopped fresh parsley
  • to taste salt
  • to taste freshly ground black pepper
  • pinch red pepper flakes for a touch of heat

Method
 

  1. Bring a large pot of salted water to a rolling boil. Add your chosen pasta and cook according to package directions until al dente. Reserve about 1 cup of the pasta water before draining. Drain the pasta and set aside.

  2. While the pasta is cooking, season the chicken pieces generously with salt and freshly ground black pepper.

  3. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.

  4. Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 1 minute, stirring constantly, until fragrant. Be careful not to burn the garlic. If using, add a pinch of red pepper flakes at this stage.

  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for about 1-2 minutes to reduce slightly.

  6. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and well combined. Season the sauce with salt and pepper to taste.

  7. Add the cooked chicken back into the skillet with the sauce. Then, add the drained pasta. Toss everything together gently until the pasta and chicken are evenly coated in the creamy garlic Parmesan sauce. If the sauce seems too thick, add a little of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.

Notes
