Ingredients
  

For the Topping
  • 2 cups cherry tomatoes halved or quartered
  • 8 fresh mozzarella balls (bocconcini) drained and roughly chopped
  • 1/4 cup fresh basil leaves thinly sliced (chiffonade)
  • 2 cloves garlic minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper freshly ground
For the Base
  • 1 baguette French bread sliced into 1/2-inch thick pieces
  • 2 tablespoons olive oil for brushing

Method
 

Instructions
  1. In a medium bowl, combine the halved cherry tomatoes, chopped mozzarella, sliced basil, minced garlic, 3 tablespoons of olive oil, balsamic vinegar, salt, and pepper. Gently toss everything together until well combined. Set this topping mixture aside to allow the flavors to meld for at least 15 minutes.
  2. Preheat your oven broiler to high, or prepare your outdoor grill for medium heat.
  3. Arrange the baguette slices on a baking sheet (or directly on the grill grates). Lightly brush both sides of the bread slices with the remaining 2 tablespoons of olive oil.
  4. Toast the bread: Place the sheet pan under the broiler, watching carefully, for 1-2 minutes per side, until golden brown and lightly crisp. Alternatively, grill for 1-2 minutes per side until grill marks appear and the bread is toasted.
  5. Once the bread is toasted, remove it from the oven or grill. If desired, immediately rub one side of each warm slice with a cut clove of garlic for an extra punch of flavor.
  6. Spoon a generous amount of the tomato and mozzarella mixture onto each slice of toasted bread. Serve immediately for the best texture and flavor.

Notes

For an extra vibrant color, consider substituting a small amount of red onion for some of the garlic. If you prefer a softer bread texture, toast lightly; for maximum crunch, broil slightly longer.
