Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 1 inch fresh ginger grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 6 cups vegetable broth
  • 1 cup carrots chopped (about 2 medium)
  • 1 cup celery chopped (about 2 stalks)
  • 1 cup sweet potato chopped (about 1 small)
  • 1 cup cooked lentils rinsed and drained
  • 1 cup kale or spinach chopped
  • salt to taste
  • black pepper to taste
  • fresh cilantro or parsley for garnish (optional)
  • lemon juice for serving (optional)

Method
 

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.

  2. Stir in the minced garlic and grated ginger and cook for another minute until fragrant, being careful not to burn them.

  3. Add the ground turmeric, cumin, and curry powder to the pot. Stir well and cook for about 30 seconds, allowing the spices to bloom and release their aromas. This toasting step enhances their flavor significantly.

  4. Pour in the vegetable broth and scrape the bottom of the pot with a wooden spoon to loosen any browned bits. This adds extra depth of flavor to your soup.

  5. Add the chopped carrots, celery, and sweet potato to the pot. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the vegetables are tender when pierced with a fork.

  6. Stir in the cooked lentils. If using kale, add it now and cook for another 5 minutes until wilted. If using spinach, add it in the last 1-2 minutes of cooking, just until it wilts.

Notes

Allow the Easy Longevity Soup to cool completely before storing. Transfer the cooled soup into airtight containers. It can be stored in the refrigerator for up to 3-4 days. Reheat on the stovetop over medium-low heat, stirring occasionally, until heated through. Avoid bringing it to a rolling boil. Alternatively, reheat individual servings in a microwave-safe bowl on medium power in 1-2 minute intervals, stirring between each, until hot. To freeze, ensure it is completely cooled. Ladle into freezer-safe containers or zip-top freezer bags, leaving headspace. It can be frozen for up to 2-3 months. Thaw overnight in the refrigerator before reheating.
