- In a medium-sized mixing bowl, add the creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir these ingredients together until they are well combined and form a smooth, cohesive mixture.1/2 cup creamy peanut butter, 1/3 cup honey or maple syrup, 1 teaspoon vanilla extract
- To the bowl with the wet ingredients, add the rolled oats, ground flaxseed, and the pinch of salt (if using). If you're adding mini chocolate chips, fold them in now.1 cup rolled oats, 1/4 cup ground flaxseed, pinch salt, 1/4 cup mini chocolate chips
- Use a sturdy spoon or spatula to mix all the ingredients together until everything is evenly distributed. The mixture should be thick and slightly sticky. If it seems too dry, you can add another teaspoon of honey or a tablespoon of water. If it's too wet, add a tablespoon more of oats.
- Cover the bowl with plastic wrap and place it in the refrigerator for about 15-20 minutes. This chilling step makes the mixture easier to handle and roll into balls.
- Once chilled, take spoonfuls of the mixture and roll them between your palms to form bite-sized balls, about 1 inch in diameter. If the mixture sticks to your hands, you can lightly dampen them with water or oil.
- Your easy no-bake peanut butter energy balls are ready to be enjoyed immediately!
Notes
These energy balls are best stored in an airtight container in the refrigerator for up to 7-10 days. They can also be frozen for up to 2-3 months.
