Ingredients
  

For the Peach Filling
  • 6 cups Fresh or frozen peach slices Thawed if frozen
  • 1/4 cup Granulated sugar Adjust to peach sweetness
  • 1 tablespoon Lemon juice
  • 2 tablespoons Cornstarch
  • 1/2 teaspoon Ground cinnamon
For the Crisp Topping
  • 1 cup All-purpose flour
  • 1 cup Rolled oats Not instant
  • 1/2 cup Packed light brown sugar
  • 1/4 teaspoon Salt
  • 1/2 cup Cold unsalted butter Cut into small cubes

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish or a 9-inch pie plate.
  2. Prepare the peach filling: In a large bowl, gently toss the peach slices with granulated sugar, lemon juice, cornstarch, and ground cinnamon until the peaches are evenly coated. Pour the mixture into the prepared baking dish.
  3. Prepare the crisp topping: In a separate medium bowl, whisk together the flour, rolled oats, brown sugar, and salt.
  4. Cut in the butter: Using a pastry blender or your fingertips, cut the cold butter into the dry topping ingredients until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
  5. Assemble and bake: Sprinkle the oat topping evenly over the peach filling. Bake for 35 to 40 minutes, or until the topping is golden brown and the peach filling is bubbling thickly around the edges.
  6. Cool slightly before serving. This crisp is best served warm with a scoop of vanilla ice cream or whipped cream.

Notes

For an extra crunch, add 1/4 cup of chopped pecans or walnuts to the crisp topping mixture. If using fresh peaches, ensure they are ripe for the best flavor. Frozen peaches do not require pre-cooking.
