  • 5 ounces baby arugula
  • 4 ounces fresh mozzarella sliced or torn into bite-sized pieces
  • 1/4 cup red onion thinly sliced
  • 1/4 cup toasted pecans chopped (optional)
Balsamic Vinaigrette
  • 3 tablespoons extra virgin olive oil
  • 1.5 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1 pinch salt
  • 1 pinch black pepper

  1. Prepare the balsamic vinaigrette: In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until well combined. Set aside.
  2. Assemble the salad base: In a large bowl, combine the baby arugula, sliced peaches, fresh mozzarella, and thinly sliced red onion.
  3. Add the dressing: Drizzle about half of the prepared balsamic vinaigrette over the salad ingredients. Toss gently to coat everything evenly.
  4. Adjust seasoning and add nuts: Taste the salad and add more dressing if desired. Sprinkle with toasted pecans if using.
  5. Serve immediately: Divide the salad among plates and serve right away for the best flavor and texture.

Notes

For a grilled peach variation, lightly grill the peach slices before adding them to the salad. This salad is best enjoyed fresh.
