- To the bowl with the oats and flaxseed, add the peanut butter, honey (or maple syrup, if using for a dairy-free option), and vanilla extract. - Using a sturdy spoon or a spatula, begin to mix all the ingredients together. It might seem a bit dry at first, but keep mixing! The goal is to incorporate all the dry ingredients into the wet ones until a thick, cohesive dough forms. Patience is key here; you want everything well combined.
- Once the dough is mostly mixed, gently fold in the chopped chocolate chips. Mix just enough to distribute them evenly throughout the dough. Avoid overmixing at this stage to keep the chocolate chips from becoming too broken down.1/4 cup chopped chocolate chips
- For easier rolling, you can cover the bowl with plastic wrap and place it in the refrigerator for about 15-20 minutes. This allows the peanut butter to firm up slightly, making the dough less sticky and easier to handle.
- Once the dough is ready, take about a tablespoon of the mixture at a time and roll it between your palms to form small, compact balls, roughly 1-inch in diameter. If the mixture is still a little too sticky, you can wet your hands slightly with water or lightly grease them with a bit of coconut oil.
- Your Easy Peanut Butter Energy Balls are ready to be enjoyed immediately! You can place them on a plate or in an airtight container.
