Method
- In a medium bowl, whisk together the peanut butter, honey or maple syrup, milk, and vanilla extract until smooth and well combined. This forms the creamy base of your oatmeal cups.1/2 cup creamy peanut butter, 1/3 cup honey or maple syrup, 1/4 cup milk, 1 teaspoon vanilla extract
- To the wet mixture, add the rolled oats, protein powder, chia seeds (if using), and a pinch of salt. Stir everything together thoroughly until all the dry ingredients are fully incorporated into the wet mixture. Ensure there are no clumps of protein powder.1 cup rolled oats, 1/4 cup protein powder, 1 tablespoon chia seeds, Pinch of salt
- Line a mini muffin tin or a regular muffin tin with paper liners or silicone cups. Alternatively, you can grease the muffin tin well. Spoon the mixture into the muffin cups, pressing it down firmly with the back of a spoon or your fingers to create compact cups. This helps them hold their shape.
- Place the filled muffin tin in the refrigerator and chill for at least 30-60 minutes, or until the cups are firm and set. This step is crucial for them to hold their shape when you remove them.
- Once set, carefully remove the Easy Peanut Butter Protein Oatmeal Cups from the muffin tin. They are now ready to be enjoyed immediately or stored for later.
Notes
These cups can be stored in the refrigerator for up to a week, or frozen for up to 2-3 months.
