Seasoning & Acid
  • 1/4 cup Fresh Lime Juice About 2 limes
  • 1 teaspoon Honey or Agave Nectar Optional, for added balance
  • 1/2 teaspoon Salt To taste

  1. Prepare all vegetables and fresh pineapple by dicing or mincing them into small, consistent pieces (about 1/4 inch).
  2. In a medium mixing bowl, combine the diced pineapple, minced red onion, diced red bell pepper, minced jalapeño, and chopped cilantro.
  3. In a separate small bowl, whisk together the fresh lime juice, honey (if using), salt, and black pepper until well combined. This creates the dressing.
  4. Pour the lime juice mixture over the pineapple and vegetable mixture. Gently fold everything together until all ingredients are evenly coated.
  5. Taste the salsa and adjust seasoning if necessary (add more salt for flavor, or a squeeze more lime for brightness).
  6. For best results, cover the salsa and let it rest in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.

Notes

This salsa is best enjoyed within 2 days of making it. If you prefer a smokier flavor, consider grilling the pineapple lightly before dicing. For a milder version, ensure you remove all seeds and white membranes from the jalapeño.
