Ingredients
  

  • 12 cups Rice Chex cereal Keep intact as much as possible.
  • 1 cup chopped shelled pistachios
  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 1/2 cup instant pistachio pudding mix
  • 1 teaspoon vanilla extract

Method
 

  1. In a very large bowl, measure out the 12 cups of Rice Chex cereal. Make sure the bowl is large enough to accommodate all the ingredients and allow for easy stirring later on. Don't break the cereal pieces; keep them as intact as possible for the best texture.

  2. In a medium microwave-safe bowl, combine the 1/2 cup unsalted butter and the 1/2 cup instant pistachio pudding mix. Microwave in 30-second intervals, stirring between each, until the butter is completely melted and the pudding mix is well incorporated into the butter. This will create a fragrant, green, and creamy mixture.

  3. Once the butter and pudding mixture is smooth, stir in the 1 teaspoon of vanilla extract. The vanilla enhances the overall sweetness and complements the pistachio flavor beautifully.

  4. Pour the warm pistachio butter mixture evenly over the Rice Chex cereal in the large bowl. Gently stir with a large spoon or spatula to coat all the cereal pieces. Be careful not to crush the cereal as you stir; aim for a light, even coating.
  5. In a separate large resealable plastic bag or a clean, very large bowl, add the 1 cup of powdered sugar. Once the cereal is coated with the pistachio mixture, add it to the bag with the powdered sugar (or to the large bowl if you used one for this step). Seal the bag tightly (or cover the bowl) and shake or stir gently until all the cereal pieces are thoroughly coated in powdered sugar. If using a bag, you might want to do this in batches to ensure even coating.
