  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil (or other neutral oil)
  • 1 pound frozen potstickers (any variety you prefer, such as pork, chicken, or vegetable)
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers (any color)
  • 0.5 cup sliced carrots
  • 0.5 cup snow peas
  • 0.25 cup sliced red onion
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 0.25 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey (or maple syrup for vegan)
  • 1 teaspoon cornstarch
  • 1 tablespoon water for cornstarch slurry

Method
 

  1. In a small bowl, whisk together the soy sauce (or tamari), rice vinegar, and honey (or maple syrup). Set aside. In a separate tiny bowl, stir together the cornstarch and water until smooth, creating a slurry. Set this aside as well. This ensures your sauce emulsifies beautifully.

  2. Heat the sesame oil and vegetable oil in a large skillet or wok over medium-high heat. Add the frozen potstickers in a single layer. Cook for 3–4 minutes per side, until they are golden brown and slightly crispy. You may need to do this in batches to avoid overcrowding the pan, which is crucial for achieving that perfect sear.

  3. Add the broccoli florets, sliced bell peppers, sliced carrots, snow peas, and red onion to the skillet with the potstickers. Stir-fry for 5–7 minutes, or until the vegetables are tender-crisp. They should still have a slight bite to them, ensuring they add a pleasant crunch to the dish.

  4. Push the vegetables and potstickers to the sides of the skillet, creating a space in the center. Add the minced garlic and grated ginger to this cleared space and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.

  5. Pour the prepared soy sauce mixture over the potstickers and vegetables. Stir to combine everything evenly. Bring the sauce to a gentle simmer.
  6. Give the cornstarch slurry a quick stir and pour it into the simmering sauce. Stir continuously until the sauce thickens and coats the potstickers and vegetables nicely, usually within 1–2 minutes.
