Cook Time 12 minutes
Cooling Time 3 minutes
Total Time 27 minutes
Servings: 24 cookies
Course: Cookies, Dessert

Ingredients

  • 1 box yellow cake mix (or your favorite flavor like devil's food or strawberry) (15.25 oz)
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract (optional, but enhances flavor)
  • 1 cup chocolate chips, sprinkles, candy pieces, or nuts (your choice for customization!) (approximately 6 oz)

Equipment

  • - Baking Sheet
  • Parchment paper or silicone baking mat
  • Large mixing bowl
  • Electric mixer (or sturdy spatula)
  • Wire rack

Method

  1. Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. This not only prevents sticking but also makes for easier cleanup, another win for our Effortless Cake Mix Cookies.
  2. In a large mixing bowl, add the two large eggs and the 1/2 cup of vegetable oil (or melted butter). If you're using it, stir in the 1 teaspoon of vanilla extract. Whisk these wet ingredients together until they are well combined and slightly frothy.

  3. Gradually add the entire box of cake mix to the wet ingredients. Using an electric mixer on low speed, or a sturdy spatula, begin to mix the cake mix into the wet ingredients. Continue mixing until just combined. Be careful not to overmix; a few streaks of dry cake mix are perfectly fine at this stage. Overmixing can lead to tougher cookies.

  4. Now for the fun part! Gently fold in your chosen mix-ins. Whether it's a classic cup of chocolate chips, a festive handful of sprinkles, crunchy nuts, or colorful candy pieces, stir them in until they are evenly distributed throughout the cookie dough.
1 cup chocolate chips, sprinkles, candy pieces, or nuts
  5. Drop rounded tablespoons of cookie dough onto the prepared baking sheet. Leave about 2 inches of space between each cookie, as they will spread slightly while baking. You can use a cookie scoop for uniform size, or simply use two spoons.
  6. Place the baking sheet in the preheated oven. Bake for 10-12 minutes, or until the edges of the cookies are lightly golden brown and the centers look set but still slightly soft. The exact baking time will depend on your oven and the size of your cookies.
  7. Once baked, remove the baking sheet from the oven. Let the Effortless Cake Mix Cookies cool on the baking sheet for 2-3 minutes before carefully transferring them to a wire rack to cool completely. This brief resting period on the hot baking sheet allows them to firm up just enough to be moved without falling apart.

Notes

Store your finished Effortless Cake Mix Cookies in an airtight container at room temperature for up to 3-4 days. If you plan to keep them longer, you can freeze the baked cookies. Place them in a single layer on a baking sheet in the freezer until firm, then transfer them to a freezer-safe bag or container. They will stay fresh in the freezer for up to 2-3 months. To reheat, you can enjoy them at room temperature or gently warm them in a microwave for 10-15 seconds for a slightly softer, melt-in-your-mouth experience. If reheating frozen cookies, allow them to thaw at room temperature first for the best texture.
