Ingredients
  

  • 1 tablespoon butter for greasing the dish
  • 1/2 pound breakfast sausage
  • 4 everything bagels everything bagels cut into 1-inch cubes (about 4 cups)
  • 1/4 cup finely chopped red onion (optional)
  • 8 large eggs
  • 1 cup milk (whole or 2% recommended)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh chives or green onions

Method
 

  1. In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon, until it is browned and cooked through. If there is excess grease, carefully drain it off, leaving a small amount in the skillet for flavor.

  2. While the sausage is cooking, cut the everything bagels into 1-inch cubes. Place these cubes in a large mixing bowl. If your bagels are very fresh and soft, you can lightly toast them in a toaster oven or under the broiler for a few minutes to give them a bit more structure and prevent them from becoming too soggy.

  3. In a separate medium bowl, whisk together the large eggs, milk, salt, and black pepper until well combined and slightly frothy. This forms the creamy base of your casserole.

  4. Add the crumbled, cooked breakfast sausage to the bowl with the cubed bagels. If you are using red onion, add it now as well. Pour about half of the egg mixture over the bagel and sausage mixture and toss gently to coat.

  5. Grease a 9x13 inch baking dish with the butter. Spread half of the coated bagel and sausage mixture evenly in the bottom of the prepared baking dish. Sprinkle half of the shredded cheddar and half of the shredded Monterey Jack cheese over this layer.

  6. Top the cheese layer with the remaining bagel and sausage mixture. Pour the rest of the egg mixture evenly over the top, ensuring all the bagel pieces are moistened. Sprinkle the remaining cheddar and Monterey Jack cheese over the entire casserole.

  7. Preheat your oven to 350°F (175°C). Cover the baking dish loosely with aluminum foil and bake for 25 minutes.
  8. After 25 minutes, carefully remove the aluminum foil. Continue to bake for another 20-25 minutes, or until the casserole is set in the center, the cheese is melted and golden brown, and the top is lightly browned. A knife inserted into the center should come out clean.
  9. Once baked, remove the casserole from the oven and let it rest for 5-10 minutes before serving. This allows it to set up further. Garnish with fresh chives or green onions before cutting into squares and serving warm.
