Method
- In a small saucepan, combine the 1/2 cup cranberries, 1/4 cup granulated sugar, and 1/2 teaspoon ground cinnamon. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens slightly, about 5-7 minutes. Remove from heat and let cool slightly.1/2 cup fresh or frozen cranberries, 1/4 cup granulated sugar, 1/2 teaspoon ground cinnamon
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Unroll the crescent roll dough onto the prepared baking sheet. If using seamless dough, you'll have one large rectangle. If using pre-cut triangles, gently pinch the seams together to form a rectangle.1 (8-ounce) can crescent roll dough
- Evenly spread the cooled cranberry mixture over the entire surface of the crescent roll dough, leaving a small border around the edges.
- Starting from one of the longer sides, carefully roll up the dough tightly into a log. Using a sharp knife, slice the log into approximately 1-inch thick rounds. You should get about 10-12 roll ups.
- Arrange the sliced roll ups on the prepared baking sheet, leaving a little space between each. Brush the tops of the roll ups with the melted butter. Sprinkle the remaining 1 tablespoon of granulated sugar over the tops.2 tablespoons unsalted butter, 1/4 cup granulated sugar
- Bake for 12-15 minutes, or until golden brown and puffed.
- While the roll ups are baking, whisk together the powdered sugar, milk (or orange juice), and vanilla extract in a small bowl until smooth. If desired, stir in the orange zest.1/4 cup powdered sugar, 1 teaspoon milk, 1/4 teaspoon vanilla extract, Zest of 1/2 an orange
- Once the Festive Christmas Cranberry Roll Ups are out of the oven, let them cool on the baking sheet for a few minutes before transferring them to a wire rack. Drizzle with the optional glaze while still warm, or serve plain.
