- In a large mixing bowl, beat the softened cream cheese, garlic powder, and apricot preserves together until smooth and creamy.
- Gently fold in the chopped dried cranberries, crumbled feta cheese, and sliced green onions using a spatula until evenly distributed.
- Lay one tortilla flat on a clean work surface and spread approximately 1/4 of the mixture evenly over the entire surface, leaving a tiny margin at the very edge.
- Roll the tortilla up tightly like a jelly roll. Repeat the process with the remaining three tortillas and the rest of the filling.
- Wrap each rolled tortilla tightly in plastic wrap to help them hold their shape and prevent drying out.
- Refrigerate the rolls for at least 2 hours (or overnight) to allow the flavors to meld and the cream cheese to firm up.
- Using a sharp serrated knife, trim the uneven ends off the rolls and then slice into 1-inch thick pinwheels. Arrange on a platter and serve chilled.
Notes
To make these even more festive, use spinach-flavored green tortillas. For best results, ensure the cranberries are finely chopped so the rolls are easy to slice cleanly.
