  • 12 oz cream cheese softened to room temperature
  • 1 cup dried cranberries finely chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup green onions thinly sliced
  • 1 tbsp apricot preserves to balance the tartness

  • 4 large flour tortillas 10-inch size, burrito style
  • 1/2 tsp garlic powder

Method
 

Instructions
  1. In a large mixing bowl, beat the softened cream cheese, garlic powder, and apricot preserves together until smooth and creamy.
  2. Gently fold in the chopped dried cranberries, crumbled feta cheese, and sliced green onions using a spatula until evenly distributed.
  3. Lay one tortilla flat on a clean work surface and spread approximately 1/4 of the mixture evenly over the entire surface, leaving a tiny margin at the very edge.
  4. Roll the tortilla up tightly like a jelly roll. Repeat the process with the remaining three tortillas and the rest of the filling.
  5. Wrap each rolled tortilla tightly in plastic wrap to help them hold their shape and prevent drying out.
  6. Refrigerate the rolls for at least 2 hours (or overnight) to allow the flavors to meld and the cream cheese to firm up.
  7. Using a sharp serrated knife, trim the uneven ends off the rolls and then slice into 1-inch thick pinwheels. Arrange on a platter and serve chilled.

Notes

To make these even more festive, use spinach-flavored green tortillas. For best results, ensure the cranberries are finely chopped so the rolls are easy to slice cleanly.
