- In a medium bowl or a zip-top bag, combine the fresh lime juice, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. - Add the chicken breasts or thighs to the marinade. Ensure each piece is well-coated. If using a bowl, cover it tightly with plastic wrap. If using a bag, seal it securely, pressing out as much air as possible. Let the chicken marinate for at least 15 minutes at room temperature, or for up to 2 hours in the refrigerator. - Once the chicken has marinated, heat a lightly oiled skillet or grill pan over medium-high heat. Remove the chicken from the marinade, allowing any excess liquid to drip off. Discard the remaining marinade. Place the chicken in the hot skillet or on the grill. Cook for about 5-7 minutes per side for chicken breasts, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). For thighs, it might take slightly longer, around 6-8 minutes per side. The chicken should have a nice sear and be golden brown.
- Once cooked, remove the chicken from the skillet or grill and let it rest on a clean cutting board for 5-10 minutes. This resting period is crucial for allowing the juices to redistribute throughout the meat, resulting in a more tender and moist chicken.
