Ingredients

  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1/4 cup fresh lime juice from about 2-3 limes
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 ripe avocado diced
  • 1/4 cup fresh cilantro chopped
  • Sliced jalapeños for extra spice, optional
  • Tortilla chips or fluffy rice for serving, optional

Equipment

  • Medium Bowl
  • Zip-top bag
  • Skillet or grill pan
  • Cutting board

Method

  1. In a medium bowl or a zip-top bag, combine the fresh lime juice, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Whisk or shake well to ensure all the spices are evenly distributed in the marinade.
1/4 cup fresh lime juice, 2 tablespoons olive oil, 1 teaspoon chili powder, 1 teaspoon cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt, 1/4 teaspoon black pepper
  2. Add the chicken breasts or thighs to the marinade. Ensure each piece is well-coated. If using a bowl, cover it tightly with plastic wrap. If using a bag, seal it securely, pressing out as much air as possible. Let the chicken marinate for at least 15 minutes at room temperature, or for up to 2 hours in the refrigerator. For optimal flavor, aiming for at least 30 minutes is recommended.

  3. Once the chicken has marinated, heat a lightly oiled skillet or grill pan over medium-high heat. Remove the chicken from the marinade, allowing any excess liquid to drip off. Discard the remaining marinade. Place the chicken in the hot skillet or on the grill. Cook for about 5-7 minutes per side for chicken breasts, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). For thighs, it might take slightly longer, around 6-8 minutes per side. The chicken should have a nice sear and be golden brown.
  4. Once cooked, remove the chicken from the skillet or grill and let it rest on a clean cutting board for 5-10 minutes. This resting period is crucial for allowing the juices to redistribute throughout the meat, resulting in a more tender and moist chicken.
  5. While the chicken is resting, prepare your fresh toppings. Dice the ripe avocado into bite-sized cubes and roughly chop the fresh cilantro. If you enjoy a bit of heat, thinly slice a jalapeño.

  6. Slice the rested chicken into strips or cubes. Arrange the sliced chicken on a serving plate or in individual bowls. Generously top with the diced avocado, chopped cilantro, and optional sliced jalapeños. For a complete meal, serve your Fiesta Lime Chicken with Avocado alongside fluffy rice or with crunchy tortilla chips for scooping.

Notes

Store leftover chicken and avocado separately. Reheat chicken gently. Do not freeze due to avocado texture.
