Ingredients

Ingredients
  • 3 cups cooked chicken breast, diced about 12 oz, rotisserie or poached
  • 1 cup plain Greek yogurt (2% or full-fat) strained if watery
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, finely minced
  • 1/2 cup red grapes, halved or diced apple
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh dill, chopped plus more for garnish
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • 1/4 teaspoon freshly ground black pepper or to taste
  • 1/4 cup toasted almonds, sliced optional, for crunch

Method

Instructions
  1. In a large mixing bowl, combine the Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and black pepper. Whisk until smooth and well blended.
  2. Add the diced chicken, celery, red onion, and grapes (or apple) to the bowl with the dressing.
  3. Fold in the chopped fresh dill, distributing it evenly throughout the mixture.
  4. Gently toss everything together until the chicken and vegetables are fully coated with the yogurt dressing. Avoid overmixing to keep texture.
  5. Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed.
  6. If using, fold in the toasted sliced almonds just before serving for extra crunch.
  7. Serve immediately on whole-grain bread, in lettuce cups, with crackers, or over a bed of mixed greens. Garnish with a sprig of dill.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The salad may release a little liquid; simply stir before serving. For a dairy-free option, substitute Greek yogurt with a thick plant-based yogurt. To save time, use store-bought rotisserie chicken. For meal prep, keep dressing and chicken mixture separate until ready to eat.
