Ingredients
  

  • 4 cups fresh cherries pitted and halved
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • cup brown sugar
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon optional
  • 6 tablespoons cold unsalted butter cubed

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix cherries with sugar, cornstarch, lemon juice, and vanilla.
  3. Pour the mixture into a buttered 8-inch baking dish.
  4. In another bowl, combine flour, brown sugar, salt, and cinnamon.
  5. Cut in the cold butter until crumbly.
  6. Sprinkle topping over cherry filling.
  7. Bake for 35–40 minutes, until golden and bubbly.
  8. Let cool before serving.

Notes

Use chilled butter for a crispier topping.
For added depth, try almond extract or a splash of bourbon.
