- Prepare the cucumbers: Slice the English cucumbers very thinly. If using standard cucumbers, peel and seed them first. Place the slices in a colander, lightly salt them, and let them sit for 10 minutes to draw out excess moisture. Pat dry with paper towels.
- Prepare the dressing: In a medium bowl, whisk together the Greek yogurt (or sour cream), apple cider vinegar, 1 tablespoon of Everything Bagel Seasoning, Dijon mustard, minced garlic, salt, and pepper until smooth and well combined.
- Combine the vegetables: In a large mixing bowl, gently combine the dried cucumber slices and the thinly sliced red onion.
- Dress the salad: Pour the prepared dressing over the cucumber and onion mixture. Toss gently until everything is evenly coated. Be careful not to over-mix, which can bruise the cucumbers.
- Fold in herbs and chill: Gently fold in the fresh chopped dill. Taste and adjust seasoning if necessary (add more salt, pepper, or vinegar for tang).
- Serve: Transfer the salad to a serving dish. Sprinkle the top generously with additional Everything Bagel Seasoning before serving immediately or chilling for up to 30 minutes to allow flavors to meld.
Notes
This salad is best served immediately. If storing leftovers, the cucumbers may release more liquid, so drain excess dressing before serving the next day.
