- Lightly brush both sides of the sourdough slices with olive oil.
- Toast the bread in a large skillet over medium heat for 2-3 minutes per side, or until golden brown and crisp. Alternatively, use a toaster oven or grill.
- While the bread is toasting, gently warm the honey in a very small saucepan or microwave for about 10 seconds until it is easily pourable. Do not let it boil.
- Once toasted, spread an even layer of ricotta cheese over the surface of each slice.
- Arrange the quartered fresh figs artfully over the ricotta layer on each slice.
- Drizzle the warmed honey generously over the figs and ricotta. Sprinkle lightly with flaky sea salt and black pepper.
- If using, finish with a light drizzle of balsamic glaze and serve immediately.
Notes
For an extra flavor dimension, lightly toast 1 tablespoon of pine nuts and sprinkle them over the finished toast before serving. Ensure your figs are ripe but still firm enough to hold their shape.
