Ingredients
  

For the Toast
  • 4 slices Artisanal Sourdough Bread About 3/4 inch thick
  • 1 tablespoon Olive Oil Extra virgin
For the Topping
  • 1/2 cup Whole Milk Ricotta Cheese Drained if very watery
  • 8 each Fresh Black Mission Figs Washed and quartered
  • 2 tablespoons Honey For drizzling
  • 1/4 teaspoon Sea Salt Flaky type preferred
  • 1/4 teaspoon Freshly Ground Black Pepper
  • 1 tablespoon Balsamic Glaze (Optional) For a tangy finish

Method
 

Instructions
  1. Lightly brush both sides of the sourdough slices with olive oil.
  2. Toast the bread in a large skillet over medium heat for 2-3 minutes per side, or until golden brown and crisp. Alternatively, use a toaster oven or grill.
  3. While the bread is toasting, gently warm the honey in a very small saucepan or microwave for about 10 seconds until it is easily pourable. Do not let it boil.
  4. Once toasted, spread an even layer of ricotta cheese over the surface of each slice.
  5. Arrange the quartered fresh figs artfully over the ricotta layer on each slice.
  6. Drizzle the warmed honey generously over the figs and ricotta. Sprinkle lightly with flaky sea salt and black pepper.
  7. If using, finish with a light drizzle of balsamic glaze and serve immediately.

Notes

For an extra flavor dimension, lightly toast 1 tablespoon of pine nuts and sprinkle them over the finished toast before serving. Ensure your figs are ripe but still firm enough to hold their shape.
