- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or a similar-sized baking dish.
- In a large bowl, gently toss the prepared peach slices with granulated sugar, cornstarch, cinnamon, and lemon juice until evenly coated.
- Pour the peach mixture into the prepared baking dish and spread evenly.
- In a separate medium bowl, combine the flour, brown sugar, granulated sugar, and cinnamon for the topping. Whisk to combine.
- Cut in the cold butter using a pastry blender, your fingertips, or a fork until the mixture resembles coarse crumbs. If using, stir in the chopped pecans.
- Evenly sprinkle the crumb topping over the peach layer in the baking dish.
- Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly and tender.
- Let the Fresh Peach Delight cool for at least 15 minutes before serving. It's delicious served warm or at room temperature, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
For best results, use ripe but firm peaches. If peaches are very juicy, you may need to slightly increase the cornstarch. For a richer topping, you can add a pinch of salt.
