  • 6 ripe peaches peeled, pitted, and sliced
  • 0.25 cup granulated sugar or to taste
  • 1 tablespoon cornstarch
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
For the Crumb Topping
  • 1 cup all-purpose flour
  • 0.5 cup packed brown sugar
  • 0.25 cup granulated sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup unsalted butter cold and cut into cubes
  • 0.5 cup chopped pecans optional

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or a similar-sized baking dish.
  2. In a large bowl, gently toss the prepared peach slices with granulated sugar, cornstarch, cinnamon, and lemon juice until evenly coated.
  3. Pour the peach mixture into the prepared baking dish and spread evenly.
  4. In a separate medium bowl, combine the flour, brown sugar, granulated sugar, and cinnamon for the topping. Whisk to combine.
  5. Cut in the cold butter using a pastry blender, your fingertips, or a fork until the mixture resembles coarse crumbs. If using, stir in the chopped pecans.
  6. Evenly sprinkle the crumb topping over the peach layer in the baking dish.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly and tender.
  8. Let the Fresh Peach Delight cool for at least 15 minutes before serving. It's delicious served warm or at room temperature, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For best results, use ripe but firm peaches. If peaches are very juicy, you may need to slightly increase the cornstarch. For a richer topping, you can add a pinch of salt.
