- Prepare all the main ingredients: dice the ripe peaches, finely mince the red onion, and finely mince the seeded jalapeño.
- In a medium non-reactive bowl, combine the diced peaches, minced red onion, minced jalapeño, and chopped cilantro.
- Squeeze the juice from the medium lime over the peach mixture. Add the optional honey, salt, and black pepper.
- Gently fold all the ingredients together until well combined. Be careful not to mash the peaches.
- Taste the salsa and adjust seasonings as necessary. If the peaches aren't very sweet, you may wish to add a touch more honey or a pinch more salt.
- Cover the bowl and refrigerate the salsa for at least 15 minutes before serving to allow the flavors to meld together. Serve chilled with tortilla chips or as a topping.
Notes
This salsa is best made the day of serving for optimal texture. If making ahead, stir just before serving as the fruit may release excess liquid.
