Salsa Ingredients
  • 3 large Peaches Ripe, peeled and diced
  • 1/2 cup Red Onion Finely minced
  • 1 medium Jalapeño Seeded and minced (remove seeds for less heat)
  • 1/4 cup Cilantro Freshly chopped
  • 1 medium Lime Juice only
  • 1 tablespoon Honey Optional, for extra sweetness
  • 1/2 teaspoon Salt Or to taste
  • 1/4 teaspoon Black Pepper Freshly ground

Method
 

Instructions
  1. Prepare all the main ingredients: dice the ripe peaches, finely mince the red onion, and finely mince the seeded jalapeño.
  2. In a medium non-reactive bowl, combine the diced peaches, minced red onion, minced jalapeño, and chopped cilantro.
  3. Squeeze the juice from the medium lime over the peach mixture. Add the optional honey, salt, and black pepper.
  4. Gently fold all the ingredients together until well combined. Be careful not to mash the peaches.
  5. Taste the salsa and adjust seasonings as necessary. If the peaches aren't very sweet, you may wish to add a touch more honey or a pinch more salt.
  6. Cover the bowl and refrigerate the salsa for at least 15 minutes before serving to allow the flavors to meld together. Serve chilled with tortilla chips or as a topping.

Notes

This salsa is best made the day of serving for optimal texture. If making ahead, stir just before serving as the fruit may release excess liquid.
