  • 3 ripe peaches pitted and finely diced
  • 1/2 red onion very finely minced
  • 1 jalapeño pepper seeds removed, minced (adjust to taste)
  • 1/2 cup fresh cilantro roughly chopped
  • 1 lime juiced (about 2 tablespoons)
  • 1/4 teaspoon salt or to taste
  • Pinch black pepper

Method

  1. Prepare all diced ingredients: finely dice the ripe peaches, red onion, and jalapeño pepper. Finely chop the fresh cilantro.
  2. In a medium mixing bowl, gently combine the diced peaches, minced red onion, minced jalapeño, and chopped cilantro.
  3. Squeeze the fresh lime juice directly over the peach mixture. This brightens the flavors and helps preserve the color.
  4. Season the salsa immediately with salt and freshly ground black pepper. Start with the suggested amounts and taste.
  5. Gently fold all ingredients together until uniformly mixed. Be careful not to mash the peaches.
  6. Cover the bowl and refrigerate the salsa for at least 15 minutes before serving. This allows the flavors to meld together beautifully.
  7. Taste again before serving and adjust seasoning (more lime, salt, or jalapeño) if necessary. Serve chilled.

Notes

For the best flavor, use peaches that are ripe but still firm enough to hold their shape when diced. If you prefer a milder salsa, use only half the jalapeño or substitute with a poblano pepper.
