- In a large bowl, combine the cubed watermelon, diced cucumber, crumbled feta cheese, and thinly sliced red onion.
- In a small bowl or jar, whisk together the olive oil, fresh lime juice, honey, salt, and black pepper until well combined.
- Pour the lime vinaigrette over the watermelon mixture.
- Gently toss the salad to coat all the ingredients evenly with the dressing.
- Add the chopped fresh mint and basil leaves to the salad and toss gently once more.
- Serve immediately or chill for at least 30 minutes to allow the flavors to meld.
Notes
For an extra kick, you can add a pinch of red pepper flakes to the dressing. This salad is best served fresh.
