- Prepare the blackberries: If using fresh, gently wash and pat dry. Place them in a small food processor or blender and pulse until coarsely chopped. You want texture, not a smooth puree.
- In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice. Mix thoroughly until completely smooth and well combined.
- Gently fold the chopped blackberries into the sweetened yogurt mixture using a spatula until they are evenly distributed. Avoid overmixing.
- Line a baking sheet with parchment paper or a silicone baking mat. Using a small cookie scoop (about 1-inch diameter) or two spoons, drop small dollops of the yogurt mixture onto the prepared sheet, spacing them apart.
- Carefully transfer the baking sheet to the freezer and freeze for at least 3 to 4 hours, or until completely solid.
- Once frozen, you may optionally drizzle with melted dark chocolate if desired. Return to the freezer for 10 minutes to set the chocolate. Store the bites in an airtight, freezer-safe container.
Notes
For easier removal from parchment paper after freezing, you can briefly place the baking sheet in a warm oven for 30 seconds before peeling them off. These are best eaten directly from the freezer.
