For the Yogurt Bites
  • 2 cups Plain Greek Yogurt (5% or full fat recommended) Ensure it is thick
  • 1/2 cup Blackberries, fresh or frozen Thawed if frozen
  • 1/4 cup Honey or Maple Syrup Adjust to taste
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Lemon Juice Freshly squeezed
Optional Coating/Garnish
  • 2 tablespoons Melted Dark Chocolate For drizzling

Method
 

Instructions
  1. Prepare the blackberries: If using fresh, gently wash and pat dry. Place them in a small food processor or blender and pulse until coarsely chopped. You want texture, not a smooth puree.
  2. In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice. Mix thoroughly until completely smooth and well combined.
  3. Gently fold the chopped blackberries into the sweetened yogurt mixture using a spatula until they are evenly distributed. Avoid overmixing.
  4. Line a baking sheet with parchment paper or a silicone baking mat. Using a small cookie scoop (about 1-inch diameter) or two spoons, drop small dollops of the yogurt mixture onto the prepared sheet, spacing them apart.
  5. Carefully transfer the baking sheet to the freezer and freeze for at least 3 to 4 hours, or until completely solid.
  6. Once frozen, you may optionally drizzle with melted dark chocolate if desired. Return to the freezer for 10 minutes to set the chocolate. Store the bites in an airtight, freezer-safe container.

Notes

For easier removal from parchment paper after freezing, you can briefly place the baking sheet in a warm oven for 30 seconds before peeling them off. These are best eaten directly from the freezer.
