Ingredients
  

  • 1 pound fresh strawberries washed, hulled, and thoroughly dried
  • 12 ounces good quality semi-sweet or dark chocolate chips (or chopped chocolate bar)
  • 1 tablespoon coconut oil or vegetable shortening optional, for smoother chocolate

Method
 

  1. Begin by ensuring your strawberries are perfectly dry. Any moisture will prevent the chocolate from adhering properly. Pat them down gently with paper towels, paying close attention to the nooks and crannies. Once dry, insert a lollipop stick, skewer, or even a sturdy toothpick into the stem end of each strawberry, leaving enough exposed to hold.

  2. In a heatproof bowl set over a saucepan of simmering water (a double boiler), melt your chocolate chips or chopped chocolate. Stir occasionally until smooth and creamy. If using, add the coconut oil or shortening to the melting chocolate and stir until fully incorporated. This will help create a thinner, glossier coating. Alternatively, you can melt the chocolate in the microwave in 30-second intervals, stirring well between each interval, until smooth. Be careful not to overheat the chocolate.

  3. Hold a prepared strawberry by its stick and dip it into the melted chocolate, rotating it to coat evenly. Allow any excess chocolate to drip back into the bowl. For a thicker coating, you can dip them a second time.

  4. Immediately after dipping, while the chocolate is still wet, sprinkle your desired toppings over the strawberries. Work quickly to ensure the toppings adhere. You can gently roll the strawberry in a dish of toppings or sprinkle them on with your fingers.

  5. Place the dipped and topped strawberries on a baking sheet lined with parchment paper or wax paper. Make sure they are not touching each other to prevent them from freezing together. Once all strawberries are dipped and placed on the baking sheet, transfer the entire sheet to the freezer.
  6. Allow the frozen chocolate covered strawberries to freeze for at least 1 to 2 hours, or until the chocolate coating is completely firm and solid.

Notes

Once fully frozen, transfer them into an airtight container or freezer-safe zip-top bag. Store in the freezer for up to 1-2 months. Best enjoyed directly from the freezer.
