Method
 

  1. Begin by washing your fresh strawberries under cool running water. It’s crucial that the strawberries are completely dry before dipping. Use paper towels to gently pat each strawberry dry, paying extra attention to the crevices around the stem. Any moisture will prevent the chocolate from adhering properly and can cause it to seize. If your strawberries have large stems, you can gently pull them off, but leaving them on makes for a convenient handle while dipping.

  2. In a microwave-safe bowl, add your chocolate chips and the optional coconut oil or vegetable oil. If using a microwave, heat the chocolate in 30-second intervals, stirring well after each interval. Continue until the chocolate is nearly melted and smooth. Alternatively, you can create a double boiler: fill a small saucepan with an inch or two of water and bring it to a simmer. Place a heatproof bowl on top of the saucepan, ensuring the bottom of the bowl doesn’t touch the water. Add the chocolate chips and oil to the bowl and stir continuously until the chocolate is completely melted and smooth. Avoid overheating the chocolate, as it can become thick and difficult to work with.

  3. Once your chocolate is smoothly melted, it's time for the fun part! Hold a strawberry by its stem or the leafy green part and dip it into the melted chocolate, tilting the bowl so that about two-thirds of the strawberry is coated. Allow any excess chocolate to drip back into the bowl.

  4. If you’re using toppings, sprinkle them over the chocolate-coated strawberries immediately after dipping, before the chocolate begins to set. Work quickly in small batches if you’re using multiple toppings. For a decorative finish, you can lightly press toppings into the still-wet chocolate.

  5. Place the dipped strawberries, either on a parchment paper-lined baking sheet or a silicone mat, ensuring they don’t touch each other. This prevents them from sticking together as they harden. Once all your strawberries are dipped and topped, place the baking sheet into the freezer for at least 15-20 minutes, or until the chocolate coating is completely firm and frozen solid. Freezing is what truly makes these treats special and gives them that delightful "snap."
