- Line a baking sheet or a flat, freezer-safe tray with parchment paper. This will prevent the bites from sticking and make them easy to remove once frozen.
- In a medium bowl, combine the plain Greek yogurt, natural peanut butter, pure maple syrup, and vanilla extract.1 cup plain Greek yogurt, 1/4 cup natural peanut butter, 2 tablespoons pure maple syrup, 1/2 teaspoon vanilla extract
- Stir all the ingredients together until they are completely smooth and well incorporated. Ensure there are no streaks of yogurt or peanut butter remaining. This creates the smooth, creamy foundation for your bites.
- If you're adding mini chocolate chips, chopped nuts, shredded coconut, or cinnamon, gently fold them into the yogurt mixture at this stage. - Using a tablespoon or a small cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Aim for bite-sized portions, spacing them about an inch apart to prevent them from touching and freezing together.
- Carefully place the baking sheet into the freezer. Allow the bites to freeze for at least 2-3 hours, or until they are completely firm and solid. The longer they freeze, the firmer they will become.
- Once frozen solid, gently peel the Frozen Greek Yogurt Peanut Butter Bites off the parchment paper. They are now ready to be enjoyed directly from the freezer!
Notes
Properly stored, they can last in the freezer for up to 1-2 months. If they happen to thaw slightly, simply pop them back into the freezer for 30 minutes to an hour to firm them up again. If you prefer a slightly softer, more palatable texture, you can let the bites sit at room temperature for about 5-10 minutes before eating.
