For the Honey Lime Dressing
  • 1/4 cup fresh lime juice
  • 3 tablespoons honey or maple syrup for vegan option
  • 1 teaspoon lime zest
  • 1 tablespoon fresh mint leaves finely chopped
  • Pinch salt optional, to enhance sweetness

Method
 

Instructions
  1. In a medium bowl, add the fresh lime juice and lime zest.
  2. Pour in the honey. If the honey is too thick, you can gently warm it in the microwave for 10 seconds to make it pourable.
  3. Whisk the lime juice and honey vigorously until they are fully emulsified and combined into a smooth mixture.
  4. Stir in the finely chopped fresh mint leaves and the pinch of salt (if using).
  5. Taste the dressing and adjust sweetness or tartness as desired (add more honey for sweetness, or more lime juice for tartness).
  6. Pour the dressing immediately over your favorite fruit salad (berries, melon, grapes, etc.) just before serving to prevent the fruit from becoming soggy.

Notes

This dressing is best made fresh. It pairs wonderfully with tropical fruits like pineapple and mango. For an optional kick, add 1/4 teaspoon of finely grated fresh ginger.
