  • 2 large lobster tails (4-5 oz each), thawed if frozen
  • 1/2 cup unsalted butter melted
  • 4 cloves garlic minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley finely chopped, plus more for garnish
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • Pinch red pepper flakes (optional, for a subtle kick)

Method
 

  1. Prepare the Lobster Tails: If your lobster tails are frozen, ensure they are fully thawed before beginning. Using sharp kitchen shears, carefully cut through the top of the lobster shell lengthwise, from the wide end down to the tail, being careful not to cut through the fin. Stop just before you reach the tail fin.

  2. Butterfly the Lobster: Gently open the shell where you've cut. Wiggle your fingers underneath the meat and carefully lift the lobster meat upwards, separating it from the bottom shell, but keeping it attached at the tail fin. Lay the meat on top of the shell, creating a "butterfly" effect. This exposes more surface area for the butter and ensures even cooking.
  3. Preheat Oven & Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Place the butterflied lobster tails on the prepared baking sheet.
  4. Make the Garlic Butter Sauce: In a small microwave-safe bowl, melt the unsalted butter. Add the minced garlic, fresh lemon juice, chopped parsley, sea salt, black pepper, and optional red pepper flakes. Stir until all ingredients are well combined.

  5. Brush the Lobster: Generously brush the garlic butter mixture over the exposed lobster meat. Make sure to get some of the butter into any crevices for maximum flavor. Reserve any leftover butter for serving.
  6. Bake the Lobster: Place the baking sheet in the preheated oven. Bake for 12-15 minutes, or until the lobster meat is opaque and firm. The exact cooking time will depend on the size of your lobster tails. Avoid overcooking, as this can make the lobster tough.
  7. Serve: Carefully remove the lobster tails from the oven. If desired, brush with any remaining garlic butter sauce. Garnish with extra fresh chopped parsley and serve immediately with lemon wedges on the side.

Notes

Best enjoyed immediately. To reheat, gently warm in a 275°F (135°C) oven for 5-7 minutes. Do not overcook.
