Ingredients
  

Zucchini Skewers
  • 3 medium zucchini about 1-inch thick, cut into 1-inch rounds or half-moons
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt or to taste
  • 1/8 teaspoon black pepper freshly ground, or to taste
Garlic Butter Sauce
  • 4 tablespoons butter unsalted
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped, for garnish
  • 1 tablespoon lemon juice freshly squeezed (optional)

Method
 

Instructions
  1. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, toss the zucchini pieces with olive oil, salt, and pepper until evenly coated.
  3. Thread the seasoned zucchini pieces onto the soaked skewers, leaving a small space between each piece.
  4. Grill the zucchini skewers for 4-5 minutes per side, or until tender and slightly charred. Rotate the skewers occasionally for even cooking.
  5. While the zucchini is grilling, prepare the garlic butter sauce. In a small saucepan, melt the butter over medium-low heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
  6. Once the zucchini is cooked, remove the skewers from the grill. Brush the warm garlic butter sauce over the zucchini.
  7. Garnish with fresh chopped parsley and a squeeze of fresh lemon juice (if using). Serve immediately.

Notes

Adjust garlic amount to your preference. These skewers are delicious served as a side with grilled chicken, fish, or steak.
