- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a medium bowl, toss the zucchini pieces with olive oil, salt, and pepper until evenly coated.
- Thread the seasoned zucchini pieces onto the soaked skewers, leaving a small space between each piece.
- Grill the zucchini skewers for 4-5 minutes per side, or until tender and slightly charred. Rotate the skewers occasionally for even cooking.
- While the zucchini is grilling, prepare the garlic butter sauce. In a small saucepan, melt the butter over medium-low heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
- Once the zucchini is cooked, remove the skewers from the grill. Brush the warm garlic butter sauce over the zucchini.
- Garnish with fresh chopped parsley and a squeeze of fresh lemon juice (if using). Serve immediately.
Notes
Adjust garlic amount to your preference. These skewers are delicious served as a side with grilled chicken, fish, or steak.
