Ingredients

  • 1.5 pounds halibut fillets (about 4-6 fillets, 1-inch thick)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice (optional, for serving)

Equipment

  • - Baking Sheet
  • - Parchment Paper
  • Small Bowl
  • Oven-Safe Skillet

Method

  1. Preheat your oven to 400°F (200°C). Pat the halibut fillets dry with paper towels; this is crucial for getting a crispy crust. Place the fillets on a baking sheet lined with parchment paper or lightly greased.
1.5 pounds halibut fillets (about 4-6 fillets, 1-inch thick)
  2. In a small bowl, combine the grated Parmesan cheese, panko breadcrumbs, chopped fresh parsley, garlic powder, onion powder, salt, and black pepper. Mix well until everything is evenly distributed.
1/2 cup grated Parmesan cheese, 1/4 cup panko breadcrumbs, 2 tablespoons chopped fresh parsley, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt, 1/8 teaspoon black pepper
  3. Brush the top of each halibut fillet with a little bit of olive oil. Press the Parmesan-breadcrumb mixture firmly onto the top of each fillet, ensuring a good, even coating.
1.5 pounds halibut fillets (about 4-6 fillets, 1-inch thick), 2 tablespoons olive oil, 1/2 cup grated Parmesan cheese, 1/4 cup panko breadcrumbs, 2 tablespoons chopped fresh parsley, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt, 1/8 teaspoon black pepper
  4. Heat 1 tablespoon of olive oil and the butter in an oven-safe skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. Carefully place the halibut fillets, crust-side up, into the hot skillet. Sear for about 1-2 minutes until the bottom is lightly golden. (If you don't have an oven-safe skillet or prefer to skip this step, you can omit it. The crust will still be delicious!)
1 tablespoon butter, 2 cloves garlic, minced, 2 tablespoons olive oil, 1.5 pounds halibut fillets (about 4-6 fillets, 1-inch thick)
  5. If you seared the fish, transfer the oven-safe skillet to the preheated oven. If you skipped the searing step, place the parchment-lined baking sheet with the crusted halibut into the oven.
1.5 pounds halibut fillets (about 4-6 fillets, 1-inch thick)
  6. Bake for 10-15 minutes, or until the halibut is opaque and flakes easily with a fork. The exact cooking time will depend on the thickness of your fillets. You want the internal temperature to reach 145°F (63°C).
1.5 pounds halibut fillets (about 4-6 fillets, 1-inch thick)
  7. Once cooked, carefully remove the halibut from the oven. Let it rest for a minute or two. Squeeze fresh lemon juice over the top if desired. Serve immediately with your favorite side dishes.
