Garlic Scape Butter
  • 1 cup unsalted butter softened
  • 1/4 cup garlic scapes finely chopped
  • 1 teaspoon fresh lemon juice optional
  • 1/4 teaspoon sea salt or to taste
  • 1/8 teaspoon black pepper freshly ground, or to taste

  1. Ensure your butter is softened to room temperature for easy mixing.
  2. Wash the garlic scapes thoroughly and trim off the woody ends. Finely chop the garlic scapes until they are almost paste-like.
  3. In a medium bowl, combine the softened butter, chopped garlic scapes, lemon juice (if using), salt, and black pepper.
  4. Mix thoroughly with a fork or spatula until all ingredients are evenly distributed and the butter is smooth.
  5. Taste the butter and adjust salt, pepper, or lemon juice as needed.
  6. You can use the garlic scape butter immediately, or chill it. To chill, you can roll it into a log using parchment paper or plastic wrap, or store it in an airtight container in the refrigerator for up to one week.

Notes

Garlic scapes are the flower stalk of the garlic plant, usually available in late spring and early summer. If you can't find them, you can substitute with 2-3 cloves of finely minced garlic, but the flavor will be slightly different. This butter is incredibly versatile!
