Ingredients
  

Tea Base
  • 4 cups Water
  • 4 bags Green Tea High quality preferred
  • 1 inch Fresh Ginger Peeled and thinly sliced
Flavoring & Sweetener
  • 1/2 cup Peach Puree From fresh or frozen peaches
  • 1/4 cup Honey Adjust to taste
  • 2 tablespoons Lemon Juice Freshly squeezed
For Serving
  • As needed Ice Cubes
  • 4 Peach Slices For garnish

Method
 

Instructions
  1. In a medium saucepan, combine the 4 cups of water and the sliced fresh ginger. Bring the mixture to a gentle boil over medium-high heat.
  2. Once boiling, remove the saucepan from the heat. Add the 4 green tea bags to the hot water. Cover the saucepan and let the tea steep for 5 minutes. Do not over-steep to avoid bitterness.
  3. Remove the tea bags and strain the liquid into a heat-safe pitcher, discarding the ginger pieces.
  4. While the tea is still warm, stir in the honey until fully dissolved. Then, mix in the peach puree and fresh lemon juice until well combined.
  5. Allow the tea mixture to cool to room temperature, then transfer it to the refrigerator and chill for at least 1 hour, or until thoroughly cold.
  6. To serve, fill four tall glasses with ice cubes. Pour the chilled tea evenly over the ice and garnish each glass with a fresh peach slice.

Notes

For a stronger ginger flavor, lightly bruise the ginger slices with the back of a spoon before boiling. Sweetness can be adjusted by using more or less honey, or by substituting the honey with maple syrup.
