- In a medium saucepan, combine the 4 cups of water and the sliced fresh ginger. Bring the mixture to a gentle boil over medium-high heat.
- Once boiling, remove the saucepan from the heat. Add the 4 green tea bags to the hot water. Cover the saucepan and let the tea steep for 5 minutes. Do not over-steep to avoid bitterness.
- Remove the tea bags and strain the liquid into a heat-safe pitcher, discarding the ginger pieces.
- While the tea is still warm, stir in the honey until fully dissolved. Then, mix in the peach puree and fresh lemon juice until well combined.
- Allow the tea mixture to cool to room temperature, then transfer it to the refrigerator and chill for at least 1 hour, or until thoroughly cold.
- To serve, fill four tall glasses with ice cubes. Pour the chilled tea evenly over the ice and garnish each glass with a fresh peach slice.
Notes
For a stronger ginger flavor, lightly bruise the ginger slices with the back of a spoon before boiling. Sweetness can be adjusted by using more or less honey, or by substituting the honey with maple syrup.
