Gipfeli Recipe – Swiss Croissants

Gipfeli, the Swiss version of croissants, are buttery, flaky pastries with a light, airy texture. Perfect for breakfast or a sweet treat, they are easy to make at home and require just a few basic ingredients.

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 packet 7g instant yeast
  • 3 tbsp sugar
  • ½ tsp salt
  • ¾ cup warm milk
  • ½ cup unsalted butter chilled and cubed
  • 1 egg for egg wash

Method
 

  1. Prepare the Dough – In a bowl, mix flour, yeast, sugar, and salt. Add warm milk and mix until a dough forms. Knead for about 10 minutes until smooth.
  2. Incorporate Butter – Roll the dough into a rectangle, place butter cubes inside, and fold the dough over. Chill for 30 minutes.
  3. Roll and Fold – Roll out the dough, fold it in thirds, and repeat this step two more times to create flaky layers. Chill between folds.
  4. Shape the Gipfeli – Roll out the dough into a large circle, cut it into triangles, and roll each triangle from the base to the tip to form a crescent shape.
  5. Final Rise – Place on a baking sheet, cover, and let them rise for 30–45 minutes until puffy.
  6. Bake – Brush with beaten egg and bake at 375°F (190°C) for 15–20 minutes until golden brown.
  7. Cool and Serve – Let them cool slightly before serving with butter, jam, or honey.

Notes

For extra flaky layers, chill the dough between each fold.
Substitute whole wheat flour for a healthier version.
Add chocolate or almond filling for variety.
