- Prepare the Dough – In a bowl, mix flour, yeast, sugar, and salt. Add warm milk and mix until a dough forms. Knead for about 10 minutes until smooth.
- Incorporate Butter – Roll the dough into a rectangle, place butter cubes inside, and fold the dough over. Chill for 30 minutes.
- Roll and Fold – Roll out the dough, fold it in thirds, and repeat this step two more times to create flaky layers. Chill between folds.
- Shape the Gipfeli – Roll out the dough into a large circle, cut it into triangles, and roll each triangle from the base to the tip to form a crescent shape.
- Final Rise – Place on a baking sheet, cover, and let them rise for 30–45 minutes until puffy.
- Bake – Brush with beaten egg and bake at 375°F (190°C) for 15–20 minutes until golden brown.
- Cool and Serve – Let them cool slightly before serving with butter, jam, or honey.
