Ingredients

Ingredients
  • 2 teaspoons agar agar powder
  • 2 cups coconut water or filtered water
  • 3 tablespoons agave syrup or sugar
  • 1 tablespoon fresh lime juice
  • 1 1/2 cups mixed fresh fruit mango, kiwi, strawberry, and grapes, diced
  • to taste fresh mint leaves for garnish

Method

Instructions
  1. Wash and dice the mixed fruit into bite-sized pieces. Set aside.
  2. In a small saucepan, combine the coconut water and agar agar powder. Let the mixture sit for 5 minutes to hydrate.
  3. Place the saucepan over medium heat and bring to a gentle simmer, stirring constantly, until the agar agar is fully dissolved, about 3 to 5 minutes.
  4. Stir in the agave syrup and fresh lime juice. Remove from heat and let the liquid cool slightly for 2 minutes.
  5. Arrange the diced fruit evenly in 6 silicone molds or small glass cups. Pour the warm agar liquid over the fruit, filling each mold to the top.
  6. Refrigerate for at least 1 hour, or until the jelly is fully set and glossy. Unmold carefully and garnish with fresh mint leaves before serving.

Notes

Agar agar sets quickly at room temperature but chilling ensures a firm, glossy texture. Use any seasonal fruit you prefer. Store leftovers covered in the refrigerator for up to 2 days.
