- Select a microwave-safe mug that holds at least 10-12 ounces. This provides enough space for the batter to rise without overflowing.
- In the mug, add the gluten-free all-purpose flour, granulated sugar, baking powder, and a pinch of salt. Stir everything together with a small fork until well combined. - In a tiny separate bowl or directly on top of the batter in the mug, combine the packed brown sugar and the 1/4 teaspoon of ground cinnamon. - Place the mug in the microwave. Cook on high power for 60-90 seconds. The cooking time will vary depending on your microwave's wattage. Start with 60 seconds and check for doneness. The cinnamon roll should be puffed up and a toothpick inserted into the center should come out mostly clean, with maybe a few moist crumbs.
- Carefully remove the hot mug from the microwave. Let it cool for about 1-2 minutes before adding the frosting. This prevents the frosting from melting too quickly.
